Homemade Walnut Butter

If you’re like me, you have an affinity for peanut butter and it’s not something you’re willing to give up regularly eating. I don’t blame you! The stuff is delicious! But when one serving comes with a whopping 190 calories and, let’s be honest, most of the time we don’t follow the serving size, it’s time to look for a lower calorie alternative.  Not to mention taking a look at the ingredient label will leave you a little iffy about the Jif. So I looked for an alternative that was wholesome, easy to make, and wouldn’t break the bank. After scouring the internet I came across this super easy walnut butter recipe. It has all the nutritional benefits of whole walnuts, with none of the added ingredients of many peanut butters.

Time:

5-10 min

What you’ll need:

  • Food processor
  • Rubber spatula
  • 2 cups walnuts, unsalted (raw or roasted)

Directions:

  • Put walnuts into food processor. Process walnuts until mixture becomes sticky, continue to grind until mixture has a buttery consistency. Scrape the sides of the bowl as you do this to make sure you keep an even consistency in your butter.
  • When desired consistency of mixture is reached, feel free to add Stevia or Splenda to sweeten and/or a pinch of salt.
  • Pour mixture into jar
  • Seal tightly and refrigerate

Just spread a two-tablespoon serving on a piece of whole grain toast, add some banana slices and you’ve got a quick, healthy, and easy breakfast that tastes delicious too!
