Recipe: Overnight Oats

One of my favorite breakfasts this time of year is oatmeal. I add a variety of things to it depending on my cravings whether its peanut butter, walnuts, raisins, cinnamon, pumpkin pie spice, or chocolate chips (don’t judge- it’s not like I have chocolate for breakfast every morning!) I have to mix something into it. Usually, I cook them like I always have, in the microwave with some milk (or water in a pinch) but then someone tipped me off to a variation on basic oatmeal- overnight oats. Basically, mix your oats (rolled or steel-cut) with milk, yogurt, protein powder, cinnamon, etc. and leave it in the fridge until morning. Here’s a recipe from SparkRecipes I’m itchin’ to try!

Coconut Almond Overnight Oats

Ingredients:

1/4 Cup oats
1/8 C. coconut, shredded
1/8 C. chopped almonds
1/2 C. lite soy milk (I would just use whatever milk I have in my fridge)
Cinnamon
Splenda (would probably just skip or throw a pinch in of regular sugar)

Directions: Stir all ingredients together in a bowl. Cover and refrigerate overnight, when you wake up the oats will be ready to eat! Enjoy!

Calories: 234.2 Total fat: 12.1g Carbs.: 35.8g Fiber: 6.9g Protein: 9.7g
