Celebrate National Spinach Day with These Three Recipes

The sun is shining and spring is here. That means I am very excited to trade in my morning eggs and spinach for my morning green smoothie!

The one thing that remains the same from seas to season is that I love to start my day with a huge serving of spinach. Spinach is such a versatile vegetable that you can have it at every meal of your day! Spinach is high in many nutrients like maganese, folate, magnesium, vitamin C and many others, which makes it the perfect vegetable to fill up on.

Since today is National Spinach Day, I'm sharing three of my favorite spinach recipes; one for breakfast, one for lunch and one for dinner!

Green Smoothie

 

  • 1 cup spinach
  • 1/2 cup frozen strawberries
  • 1 banana
  • 1 cup unsweetened almond milk

Directions: Place all ingredients in a blender and blend until smooth. Delicious!

Strawberry Spinach Salad

 

  • 2 cups spinach
  • 5 strawberries, quartered
  • 1/4 cup feta cheese
  • 2 tablespoons walnuts
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Directions: Combine all ingredients in a salad bowl. Stir, and enjoy!

Spinach and Spaghetti Squash

 

  • 1 spaghetti squash, cooked
  • 6 ounces chicken, cooked and cubed
  • 6 cups spinach
  • 1/2 cup parmesan cheese
  • 2 tablespoons minced garlic

Directions: While the spaghetti squash and chicken are still warm, add in spinach and parmesan cheese until spinach wilts and cheese melts. Add in minced garlic and any seasonings you would like.
