Recipe: Homemade Whole Wheat Bread

When I was growing up, my mom would bake homemade bread all of the time. I remember thinking that the smell of freshly-baked bread was the best thing in the world! It was especially good during the winter, when she would make her world-famous (well, at least neighborhood-wide famous) turkey chili and serve it with a slice of fresh bread.

I was particularly nostalgic this past weekend and decided to try out my bread-making chops with a new recipe. While my bread didn’t taste quite as good as my mother’s (when does anything taste as good as what mom made?), I was still really happy with how it turned out! And by using whole wheat flour, this bread is definitely better than its white bread counterpart.

Yield: 2 loaves

Ingredients:
2 cups water
1/3 cup oil
2 tablespoons honey
2 tablespoons yeast
2 ½ tablespoons salt
1 cup white flour
5 ½ cups whole wheat flour

Directions:
1. In a mixer, add water, oil, honey, yeast, salt and white flour.
2. Add three cups of whole wheat flour and blend together.
3. Add remaining flour in small amounts to get a firm, but elastic, texture. More flour may be added if needed.
4. Knead on high for 10 minutes. Dough should be firm, but elastic
5. Form into 2 loaves and place in a well-greased loaf pans. Let rise until doubled in size – about 30-45 minutes.
6. Bake at 350 degrees for 30-45 minutes or until the bread sounds hollow when lightly tapped. You may want to cover loosely with foil for the last 5-10 minutes to prevent over-browning. Immediately remove bread from pans. Cool completely on wire racks.
