Recipe: Cucumber Salad

Even though summer may be winding down, it’s not too late to take advantage of some of the great fresh veggies that the season has to offer!  Give this cucumber salad recipe a try – it’s a low-fat and refreshing dish.

Cucumber Salad
Serves 6-8

Ingredients:
2 cucumbers, very thinly sliced
1 red onion, very thinly sliced
2 tablespoons vinegar or lemon juice
2 tablespoons low-fat sour cream
Salt and pepper, to taste
½ teaspoon sugar
1 teaspoon chopped fresh dill

Directions:
1. Mix cucumbers and onions together
2. Mix rest of ingredients together in a closed bowl and give a shake
3. Add to cucumbers, chill until very cold and serve.

Sodium: 4 mg (may change dependent on amount of salt added)
