Meal Prep: Italian-inspired Pasta with Chicken and Roasted Vegetables

We're showing you how to prep meals with an Italian influence today!

We have chicken as our protein source, a mix of vegetables and some whole-wheat pasta. We used vegetables such as broccoli, zucchini, cherry tomatoes and onion. To spice it up, we added olive oil, garlic powder, salt and Italian seasoning. Cook your pasta according to the package, mix up the vegetables, oil and spices and throw it on a sheet pan! Italian-inspired Pasta with Chicken and Roasted Vegetables

Grain/complex carbohydrate: whole grain pasta

Prepare: Boiled in water

Serving Size: up to 2 oz. (1 cup cooked, per serving)

Protein: Chicken

Prepare: Bake chicken ahead of time or Crock-pot (season and then place chicken in a single layer at bottom of Crock-pot)

Serving Size: 3 oz.

Vegetables: Roasted vegetables: broccoli, cauliflower, tomatoes, zucchini, and onion.

Prepare: Oven roasted

*Quick pick: Steamed bag of vegetable blend

Serving size: 1 cup

Season your veggies and throw them on a sheet pan to roast at 350 degrees for about 20 minutes. 

We seasoned our chicken and vegetables with:

  • 1 tablespoon of olive oil
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of garlic powder
  • 1 teaspoon of Italian seasoning

Assemble 5 containers with:

1 cup cooked whole grain pasta, 3 oz chicken, 1 cup vegetable mix
