With school back in session, days becoming noticeably shorter and pumpkin-inspired everything advertised we know fall is upon us. I have mentioned before that while I hate the season that comes after this time of year, I do love autumn. The cooler weather makes exercising outside very enjoyable, the colors in the trees are beautiful and you can shut off the A/C and sleep with windows open- what’s not to love? This is also the time of year I tend to do more cooking and baking – here are some of my favorite recipes, or just some new ones I’m going to try.
Chili- I love making spicy chili!
White Chicken Chili- make this at the same time in your slow cooker, freeze for later
Spicy Salsa Pumpkin Soup- an oldie from Coach Joanna’s blog but it’s easy to make and delicious so I make it often this time of year.
Lightened-Up Apple Crisp- what? You need a desert and it IS apple season!
It’ll be nice to have a few meals in the freezer for those days during the week where everyone’s hungry but nobody wants to cook. Of course, I recommend sampling each dish before you put it away- enjoy!
