Recipe: Sweet Sticky and Spicy Chicken

I love Chinese food, I really do, but the stuff we order is so high in calories, fat, and sodium so we don’t often get it. However, I found a recipe recently that I looooove and it’s so easy. It’s still higher in sodium so it’s not extremely healthy but it’s far better than what you would consume if you ordered out. So, if you’re in the mood for a delicious sweet and spicy meal, look no further.

Sweet, Sticky and Spicy Chicken

Ingredients (4 servings):

  • 1 Tbsp. brown sugar
  • 2 Tbsp. honey
  • ¼ cup soy sauce (I used reduced sodium)
  • 2 tsp. chopped fresh ginger root (let’s be honest, I just used whatever ginger was in our cupboard)
  • 2 tsp chopped garlic
  • 2 Tbsp hot sauce (I love Sriracha)
  • Salt and pepper to taste (didn’t need either)
  • 4 skinless, boneless chicken breast halves- cut into ½ strips
  • 1 Tbsp vegetable oil

Directions:

  1. Mix together brown sugar, honey, soy sauce, ginger, garlic and hot sauce in a small bowl.
  2. Lightly salt and pepper the chicken strips (like I said, I skip this and it’s still delicious)
  3. Heat oil in a large skillet over medium heat. Add chicken and brown on both sides, about 1 minute per side. Pour the sauce over the chicken and simmer until the sauce thickens, 8 to 10 minutes.

While I’m cooking the chicken I also make some brown rice to mix with this, next time I’m going to add some broccoli to the chicken as well, bumps up the nutrition and the taste.

Nutrition (just the chicken): 232 calories/13.9 g carbohydrates/9.3 g fat/22.8 g protein/1234 mg. sodium
