Meal Planning Success

Every Saturday morning I have a surge of energy and this great plan to get my things in order and plan a menu for the upcoming week. I plan the grocery trip around this and decide I’m going to do a few hours of prep on Sunday. Annnnd every Sunday afternoon I end up napping during my free time instead. Well, this past week I actually made it happen. I didn’t plan anything fancy and I included our pizza night (Friday) where we just do a take and bake pizza, here it is:

 

Monday night: Thai Chicken and Pineapple Stir Fry. Brown rice and steamed broccoli (from frozen) on the sides.

 

Tuesday night:  Mexican quinoa. This was so easy, I’ve made this so many times and I don’t follow any recipe at this point:

Throw 1.5 cups water (or broth), 1 cup uncooked quinoa, 1 can of diced tomatoes, 1 small can of diced chills or jalapenos into a pan, bring to a boil and then let simmer for 15-20 minutes until quinoa is cooked and most of the liquid is soaked up. I throw in chili powder and cumin as well.  Steamed green beans as our veggie.

 

This dish makes a lot so you have leftovers for lunch and though I like to eat it on it’s own, you could put it in a tortilla like a taco as well.

 

Wednesday night: Crockpot salsa chicken for easy chicken tacos in the evening. I used corn tortillas, my husband chose flour, and our kid chose applesauce and yogurt. Yes, I tried to get him to eat a quesadilla with chicken and black beans but he decided to throw it to the dog.

 

Thursday night: Grilled cheese and tomato soup for everyone. Side of romaine with vinegar and oil dressing.  Hey, I warned you this plan isn’t fancy.

 

Friday night: Pizza night! My favorite night! We got a thin crust from Papa Murphy’s and pretty much ate the whole thing. The dog didn’t get any.

 

On Sunday I made sure to pull some frozen chicken breasts out of the freezer and put them into the fridge and cut up my bell pepper. I didn’t have to chop the romaine as I bought it chopped and washed. The other vegetables were frozen so those took no prep. I put chicken into the crock pot frozen so I didn’t need to remember to take it out beforehand- could not have been easier.
