Summer means a lot to me, and two of my favorite things about it include grilling out, and eating delicious watermelon.
Is there anything more satisfying than biting into a juicy piece of watermelon on a summer day? Or hanging out by the grill with a cold beverage in hand?
Well I have found a fun new way to pair these two staples of summer! Enter grilled watermelon!
- Juice and zest of 1 lime
- 1 tbsp olive oil
- 1/4 cup honey (or agave nectar if you're vegan)
- 1 watermelon cut into 1" thick wedges
- Mint leaves
- Sea Salt
Heat grill to medium heat. In a bowl, whisk together first three ingredients. Brush over watermelon wedges. Place wedges on grill and cook until grill marks form and fruit begins to soften slightly. Serve with mint leaves and sea salt!
