Turn Up the Heat

I have never been a huge fan of spicy foods. They have always been more painful than enjoyable. Call me crazy, but I would like to leave the dinner table without crying or guzzling milk to make the spiciness go away.

 

With that being said, I have recently discovered that a little bit of hot sauce mixed into my meals can go a long way and really kick things up a notch in the flavor department. While looking for spicy but enjoyable recipes, I came across this Buffalo Cauliflower recipe from one of my favorite bloggers Carrots 'N' Cake!

Bang Bang Buffalo Cauliflower

Makes 2 servings

Ingredients:

  • 12 ounces cauliflower florets

  • 1/3 cup liquid egg whites (or 2 large)

  • 2/3 cup almond meal

  • 1/2 cup buffalo sauce

  • 1 tbsp. mayo

  • 1 tbsp. honey

  • 2 tsp. rice vinegar

  • 2 tsp. hot sauce (optional)

  • salt & pepper to taste

 

Directions:

1.       Preheat oven to 400 degrees F.

2.       Pour egg whites into one bowl and almond meal into another. Fully coat cauliflower florets in egg whites and then cover in almond meal. Then, place florets on a prepared baking sheet and bake in oven for 20 minutes. (Optional: Sprinkle with salt + pepper.)

3.       Meanwhile, prepare the sauce. Combine buffalo sauce, mayo, honey, rice vinegar, salt, and pepper in a large mixing bowl.

4.       When 20 minutes is up, remove cauliflower florets from oven and allow them to cool slightly. Turn oven up to 450 degrees F.

5.       Add florets to the sauce in the mixing bowl and coat completely.

6.       Return sauce-covered florets to baking sheet and bake in oven for another 5-7 minutes until crispy and lightly browned.

7.       Remove from oven and serve immediately!
