The holiday season is coming to an end and New Years Resolutions are beginning to take shape! Stay on track with your healthy eating intentions in 2018 by starting out with the delicious and easy dinner recipe! And a bonus? Prep time is about 10 minutes max!
- 1 Tbsp olive oil
- 3 chicken breasts
- 2 red bell peppers, chopped in thin strips
- 1 green bell pepper, chopped in thin strips
- 1 white onion, chopped
- 1/2 cup buffalo sauce
- optional: cheddar cheese
Preheat oven to 375 degrees. Spread olive oil over the bottom of a 13x9 baking dish. Place the chicken breast in the baking dish. Cover with the buffalo sauce. Sprinkle the chopped onions and peppers over the top of the chicken. Cover with tin foil and bake for 40 min. After 40 minutes has passed, remove tin foil and sprinkle the cheese (if desired) over the top. Place back in the oven for an additional 5 minutes or until chicken is done and cheese is melted.
