Sweet Potato Pizza Crust Recipe

Who doesn’t like pizza?! Whether it is delivered to your door, fresh baked at a restaurant, or even a frozen pizza that you make at home, we have many options (healthy and unhealthy) when choosing this food item. I began to think, “What other alternatives are there for pizza crust?” I have heard of cauliflower crust before, but upon my search for other healthy options, I came across this recipe for sweet potato pizza crust. That then made me think, “Who doesn’t love sweet potatoes?!” This is also a great way to incorporate more vegetables into your meal, and know what all of the ingredients in the pizza are.

Easy Sweet Potato Pizza Crust 

Crust:

  • 7 medium (4 oz. each) sweet potatoes
  • 1 tbsp extra virgin olive oil
  • 1 large garlic clove, crushed
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ½ tsp ground black pepper
  • 2.5 oz. low fat mozzarella cheese, shredded

 

Toppings:

  • ½ red onion, sliced
  • ½ bell pepper, sliced
  • 1 cup small broccoli florets
  • 1 lb ground turkey, extra lean
  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp ground black pepper
  • ¾ cup tomato sauce
  • 2.5 oz. low fat mozzarella cheese, shredded
  • Cooking spray

Any of these toppings are optional. Choose the toppings that you like and remove or replace those that you don’t like!

 

Directions:

  1. Preheat the oven to 450 degrees F and spray the baking sheet with cooking spray.
  2. Wash, pat dry, and cut off the ends of the sweet potatoes; peeling optional. Using a sharp knife or mandolin, cut each sweet potato lengthwise into 1/8 inch thick slices. Add to a large bowl and drizzle with olive oil, garlic, smoked paprika, salt, and pepper. Toss gently to coat. Lay potato slices in a single layer lengthwise, making sure they overlap by 1/8 inch.
  3. Add the vegetables (nothing else) over the sweet potatoes. All vegetables will roast at the same time. Spread vegetables on top of the sweet potatoes and spray with cooking spray along with a pinch of salt and pepper. Bake on the middle oven rack for 20 minutes then broil on high for 10 more minutes, turning the sheet half way through broiling.
  4. In the meanwhile, preheat a large non-stick skillet on medium heat and add ground turkey, oregano, salt and pepper. Cook for 10 minutes or until golden brown and crispy, stirring occasionally and breaking into pieces.
  5. Remove from the oven and sprinkle with 2.5 oz. of cheese, making sure the majority of cheese shreds cover the seams to help form the crust. Drizzle tomato sauce on top. Sprinkle turkey pieces and cover with the remaining 2.5 oz. of cheese. Return pizza to the oven and broil on high for 8-10 minutes or until cheese is bubbly and golden, turning the sheet half way. Cut into 12 slices and serve hot or cold.
