Super Bowl Menu: Appetizers and Sides

Let’s get ready for some FOOTBAAAAAAAAAL!  That’s right football fans, the big day is coming up this weekend!  Whether your team made it to the super bowl, or you’re watching for the commercials, many of us will spend some time on the couch this weekend eating party food while watching the big game.

What types of food will be on your plate?!  The coaches got together to compile some of our favorite football inspired recipes.  Try one, or all of them this weekend.  And stay tuned on Friday for part 2 of this blog – we’ll be sharing some more great options!

Skinny Buffalo Chicken Dip                            

This Skinny Buffalo Chicken Dip is a lighter version of your favorite appetizer!

Ingredients:

  • 2 cups shredded chicken
  • ½ cup nonfat Greek yogurt
  • 8 ounces Neufchatel cheese, softened
  • 4 ounces crumbled bleu cheese (about 1 cup)
  • ½ cup hot sauce (such as Frank's)

Instructions:

  1. Preheat the oven to 350 degrees.
  2. Mix all ingredients together well.
  3. Bake in the preheated oven until hot and bubbly, about 20 minutes.
  4. Enjoy!

Football Helmet Fruit

Can I be so bold as to say this recipe is pretty self-explanatory?

Cut up any type of fruit you like, and then carve out a watermelon shaping it like a football helmet.

Football Veggie Trays

Here’s another easy one. Get several different kinds of vegetables and arrange them artfully to create a football themed masterpiece!

 

Buffalo Cauliflower

For the love of all things spicy! This recipe will give you an extra "kick" during the big game!

Ingredients:

  • 12 ounces cauliflower florets
  • 1/3 cup liquid egg whites (or 2 large)
  • 2/3 cup almond meal
  • 1/2 cup buffalo sauce
  • 1 tbsp. mayo
  • 1 tbsp. honey
  • 2 tsp. rice vinegar
  • 2 tsp. hot sauce (optional)
  • salt & pepper to taste

Instructions:

  1. Preheat oven to 400 degrees F.
  2. Pour egg whites into one bowl and almond meal into another. Fully coat cauliflower florets in egg whites and then cover in almond meal. Then, place florets on a prepared baking sheet and bake in oven for 20 minutes. (Optional: Sprinkle with salt + pepper.)
  3. Meanwhile, prepare the sauce. Combine buffalo sauce, mayo, honey, rice vinegar, salt, and pepper in a large mixing bowl.
  4. When 20 minutes is up, remove cauliflower florets from oven and allow them to cool slightly. Turn oven up to 450 degrees F.
  5. Add florets to the sauce in the mixing bowl and coat completely.
  6. Return sauce-covered florets to baking sheet and bake in oven for another 5-7 minutes until crispy and lightly browned.
  7. Remove from oven and serve immediately!
