If you’re like me then you’re really excited for spring and summer. But if you’re like me you’re also not overly delusional optimistic it’s going to be here anytime soon. So, what do we do? Do we sit around and mope? Nah, I’ve got a better idea- let’s bring summer to us by way of a “grill out” dinner party! My wonderful husband will go out and grill as long as it’s about 30 degrees so he’ll have that duty. We’ll open all the blinds to let as much light in as possible, put on some Beach Boys, light some citronella candles and have a summer party in the middle of winter. Here’s our menu:
Hamburgers. Sometimes you just need a burger.
Grilled vegetables. I like asparagus with some olive oil and just a little salt. Maybe we’ll also throw on some feta-stuffed mushrooms.
Potato salad. No, it’s not the healthiest side dish but this recipe
helps trim a few of the calories.
Homemade angel food cake with strawberries. If you have only eaten this cake from the box and haven’t been that impressed, I get it. But I swear, just try this homemade version
and you’ll be an angel food cake fan. If you feel as though you need to add a scoop of ice cream to make it really feel like summer…go ahead, I’m probably going to do the same!
For a beverage I really just like a lower calorie lemonade mix. Nothing fancy, but lemonade will always feel like summer to me.

Even if this doesn’t help just remember the days are getting longer, it will get warmer, and we’ll be back to complaining about the heat and humidity in no time!
