Steamed Veggies on the Grill?

Yes that’s right, steamed veggies made on the grill! This is one of my favorite things to do in the summertime. Grilling doesn’t have to be all about the burgers, brats, and hot dogs, it can be about veggies too!

One way that I like to cook vegetables on the grill is to place them in a foil packet. The foil packet keeps in the moisture and steams vegetables to perfection without the grilled char or burn. Simply place whatever vegetables and seasonings you like in a foil packet, leaving enough room for steam and ta-da! You have your steamed side dish ready to go.

Here is a recipe that I like to cook up as a side to my main course.

Zucchini and Bell Pepper Foil Packets 

Ingredients:

  • 2-3 sliced zucchini
  • 2 bell peppers – choose your color(s), deseed and chop
  • ½ chopped onion
  • 2 tsp minced garlic or 1 tsp garlic powder
  • ½-1 tbsp olive oil
  • Season to taste with pepper, spices, or one of my favorite Mrs. Dash seasonings 

Putting it together:

  • Place all ingredients (zucchini, peppers, onions, garlic, olive oil, and seasonings) on a sheet of heavy duty foil.
  • Fold in sides to form a packet, leaving room at the top for steam. Grill over medium-high heat, 10-12 minutes. For faster cooking or portion control, distribute the ingredients in multiple packets and cook accordingly.
