Would you care to know what I was craving this past weekend? A spinach salad! Ha! I’m kidding, I was not craving spinach I was craving s’mores but I know that my body needs some nutrients to go with all the chocolate and marshmallows. So I did whip up a spinach salad and because strawberries were on sale I included them into the mix and it was fantastic. Seriously, even if you aren’t “craving” a salad you know you could eat some more fruits and vegetables, here’s the recipe to do just that!
Spinach Strawberry Salad
Ingredients:
Easy Herb Vinaigrette:
- 9 Tbsp. white wine vinegar
- 1-½ tsp fine sea salt
- 1 cup canola oil
- 3 Tbsp. chopped fresh basil
- 3 Tbsp. minced fresh chives
Salad:
- 1-½ cups quartered strawberries
- ¼ cup Easy Herb Vinaigrette
- 1 Tbsp. finely chopped fresh mint
- 1 (6 oz.) package fresh baby spinach (I also threw in some random greens I had in the fridge)
- 2 Tbsp. sliced almonds, toasted (or not…I was lazy)
- ¼ Tsp. freshly ground black pepper
Directions:
- Combine the first 3 ingredients in a medium bowl; slowly whisk in oil until combined. Stir in basil and chives.
- Combine strawberries, ¼ cup vinaigrette, mint and spinach in a large bowl; toss gently to coat. Sprinkle with almonds and pepper; serve immediately. Store remaining vinaigrette, covered, in refrigerator for up to 5 days.
