Shrimp Stir Fry

Do you ever have one of those days where you just plain don’t want to cook? I know I sure do. That’s when one pot meals come in handy. I come up with one pot meals on days when creativity is lost and I just want to have something on the table!! Last night I made an amazing Shrimp Stir Fry. It was delicious - I combined shrimp, rice, veggies and eggs to create a delectable dish. Try it out!
 
Ingredients
• 1 tablespoon coconut oil (Or whatever you have around - the coconut gives it extra flavor!)
• Shrimp-however much you would like ( I used about half a bag of frozen shrimp)
• Brown Rice-I used two cups from my recipe
• 1 bag frozen peas and carrots
• 1 tablespoon minced garlic
• Low Sodium Soy Sauce-to taste
• Cashews**
• Chopped Green Onion**
 
Directions
Heat coconut oil in a large frying pan on medium heat.
Add shrimp and cook for about 5 minutes, then stir in the rice and frozen vegetables.
Continue stirring until vegetables are heated up and tender.
Add in soy sauce and garlic.
**Garnish with cashews and green onion if desired.
