Recipe: Zucchini with Bacon Bits

It's summertime! We have been eating a lot of zucchini in our household and frankly, I run out of ways to prepare it. One recipe that I make frequently is zucchini wiht bacon bits! This four-ingredient recipe is quick, simple, and tasty!

Zucchini with Bacon Bits

Ingredients

  • 4 cups zucchini, sliced or diced
  • 2 tablespoons of real bacon bits
  • 1-2 tablespoons olive oil
  • Season to taste with salt, pepper, and garlic powder, or use my favorite: Mrs. Dash Garlic and Herb seasoning

Putting It All Together

Prepare zucchini in the shape you prefer, peeled or unpeeled. To decrease extra moisture and zucchini seeds, spoon out the center of the zucchini and discard. Add all ingredients to a frying pan and cover. All ingredients will steam over medium heat for 10-12 minutes, or until a fork can poke gently through the zucchini.
