Recipe: Layered Fiesta Bowl

The other night I decided I wanted to try something new. I decided to browse the internet for a new and different recipe. Boy oh boy did I hit the jack pot when I found a recipe for a Layered Fiesta Bowl! It was seriously easy to make, and seriously delicious! So easy and delicious, that I proceeded to make it for the past three nights in a row! If you are looking for a healthy well balanced Mexican themed meal, this is it. Seriously. Try it.

Layered Fiesta Bowl

Ingredients

·         1-2 medium green bell peppers

·         1 large yellow onion

·         2 cups of cooked brown rice

·         3-4 chicken breast (thawed)

·         1 ripe avocado

·         1 red bell pepper (diced)

·         Olive oil

·         Cumin

·         Cayenne Pepper

·         2 teaspoons minced garlic

·         Apple Cider Vinegar

·         Chili Powder

Directions

Start by chopping the green bell pepper and the onion. Sautee those in a frying pan with Olive Oil, Garlic, Salt, Pepper, Cumin, and a hint of Cayenne Pepper. Cook until soft and then mix in with the brown rice.

Next, slice the chicken into strips and grill in a mixture of Apple Cider Vinegar, Salt, Pepper, Chili Powder and Garlic.

While the chicken is cooking, dice up one red bell pepper, and slice an avocado into long strips. Once the chicken is done all you have left to do is layer the ingredients. I start with a small plate and put down a layer of rice and vegetables. Next add 2-3 strips of chicken. On top of that I place 2-3 slices of avocado and then sprinkle on the diced red bell pepper. Serves 4.

I also like to add a few more ingredients like salsa a little bit of all natural sour cream. That’s all folks! Enjoy!
