Recipe: Hot Baked Cinnamon Apples

This past weekend, I went out to visit the local apple orchards.  It seems as though we are fully into apple season!  I love fresh, local apples and I ended up purchasing an entire bushel of McIntosh!  So lately, I’ve been searching for healthy ways to prepare and serve apples.

Here’s one that I found that could be used as a dessert, breakfast, or even just as an afternoon snack.  Let me know what you think!  (And let me know if you have any great healthy apple recipes – I still have a lot of apples left!)

Serves 8.

Ingredients:
10 apples, cored, peeled and sliced thin
2 teaspoons cinnamon
1 cup brown sugar
2 teaspoons lemon juice
1 dash salt
1 dash nutmeg

Directions:
1. Place cut and peeled apples in a mixing bowl and gently mix all the ingredients together.
2. Put apples in a non-stick pan, and cook covered for 45 minutes at 375 degrees.
3. Stir at least once every 15 minutes.
4. Once they are soft, cook for another few minutes to thicken the cinnamon sauce.

For an extra treat, serve warm with a scoop of frozen vanilla yogurt!
