Recipe: Crock Pot Gumbo

Ok, you’ve had a busy week at work, you’re kids have had sports or theatre practice most nights, the house needs to be cleaned but… you also need to make dinner! I’ve discussed my love for crock pot recipes before and, not to get dramatic, but I still think they are the world’s best kitchen tool ever! Throw in a bunch of ingredients, turn it on, head to work, school or football, come home and enjoy!

Because there are just too many for me to choose from, here are several sites with a variety of crock pot recipes.

My next meal is going to be from the Better Homes and Gardens website: 

Cajun-Seasoned Vegetarian Gumbo 

Ingredients:
2 15 oz. cans black beans, drained and rinsed
1 28 oz. can of diced tomatoes
1 16-ounce package frozen loose-pack pepper stir-fry vegetables
2 cups frozen cut okra
2-3 tsp. Cajun seasoning
White or brown rice (optional)
 

Directions:

  1. In a 3-1/2- or 4-1/2-quart slow cooker combine beans, undrained tomatoes, frozen stir-fry vegetables, okra, and Cajun seasoning.  
  2. Cover and cook on low-heat setting for 6 to 8 hours or on high-heat setting for 3 to 4 hours. If desired, serve over hot cooked rice. Makes 6 servings  

Nutrition (per serving): 153 calories, 639 mg sodium, 31 g carbohydrates, 7 g sugar, 10 g fiber.
