Recipe: Baked Apples

My favorite season is upon us…autumn! I love everything about fall: the colors in the leaves, the cooler temperatures, the pumpkins (my favorite color is orange!) and apples! Yes, fall season is apple season. With so many varieties to choose from I never get bored with apples. My current favorite is Sweet Tango. Apples are a great choice for a snack because they are low in calories and they also provide fiber which can help keep you full until mealtime.

Lately though, I have been using apples for dessert as well. Apple pie and apple crisp are always great but last night I was in the mood for something that didn’t require too many ingredients (mainly because I need to go grocery shopping). As a result, I decided on baked apples. There are tons of recipes for baked apples but this one is by far my favorite from

Yields: 2 servings

2 apples, cored
4 tsp. dried fruit (I use raisins)
4 tsp. toasted nuts (walnuts, pecans, or almonds)
1 tsp. honey
Pinch of cinnamon
½ cup apple cider
¼ cup plain yogurt

1. Preheat over to 350 degrees Fahrenheit.
2. Combine fruit, nuts, honey and cinnamon; spoon into the center of the apples. Place the apples in a small baking dish and pour apple cider around them. Cover with foil. Bake until tender, about 45 minutes. Serve topped with yogurt.
