Just the other day I was scrambling to find something to bring to work for my lunch and I stumbled upon an old favorite: a peanut butter and jelly sandwich. Using some whole wheat bread, natural peanut butter, and homemade raspberry jelly I recreated my favorite lunch from middle school. It hit the spot, satisfied my hunger and reminded me how easy and quick it was to make a healthy lunch. Peanut butter and jelly sandwiches can be a great source of protein, carbohydrates, fiber, and vitamins and minerals. For more variations on the peanut butter and jelly sandwich, see below:
PB & J + Banana
If you have some bananas lying around your countertop, slice it up and add it to your peanut butter and jelly.
PB & J + Apples and cinnamon
Slice up an apple, sprinkle some cinnamon on it, microwave it for about 15-20 seconds, then toss it on your sandwich, yummm.
AB & J
AB would be almond butter of course! Or try cashew butter, apple butter, or pumpkin butter which is perfect for fall!
PB + Honey
Honey drizzled on a slice of warm toast and peanut butter = heavenly. This is probably my favorite combo!
PB & pickles…
Yes, you read that right. I have a few friends who swear by peanut butter and pickle sandwiches. I nearly gagged when I saw them make it but who knows, maybe it’s delicious. If you’ve tried this, let me know how it tasted!
