No Grocery Shopping Needed

I realize many people have been stuck inside the past few weeks here in Wisconsin. First due to frigid temperatures, then because of mountains of snow, many people have stayed at home to avoid the roads and extreme cold, so they may not have much for produce and are left digging through the fridge and pantry to make some meals.

So, I've gathered up a few of my favorite meals to make when using up what we've got on hand. 

Southwest Omelet--Serves 2

  • 4 eggs
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup shredded cheese, we had some cheddar mix in the fridge
  • Salsa

Mix the eggs and a pinch of salt in a bowl and pour into a pan, over medium heat. After a few minutes, as the omelet is cooking, add the cheese and black beans on one half. Fold the other half over and continue cooking until the omelet is done. Add as much salsa as you like!

One Pan Mexican Quinoa--this makes a lot so it's great for the whole family! It uses canned beans, tomatoes and corn (I used frozen corn.) Check out the recipe here

Tomato Soup and Grilled Cheese--Serves 2 (the soup, at least)

This isn't really a recipe I made, I just follow the instructions on the Campbell's soup can. Then, I add a slice of American cheese on a slice of whole wheat bread, top with another slice, lightly butter both sides and cook on the stove top. This combination is my favorite comfort food and most people have all the ingredients on hand.

So there you go, you have a few meal ideas to tide you over until you can get out-and-about to grocery shop!
