Mushrooms and Fruit and Veggies! Oh my!

I tried some new and exotic foods recently!

Have you ever heard of a vegetable called taro?

It’s a starch, similar to a potato. Compared to a white potato, it has three times the amount of fiber, and is also a rich source of potassium, iron, vitamin C, and vitamin A.

Cooking it is really no different than a regular potato.  You can mash it, boil it, fry it, roast it… you an even make taro chips, similar to a potato chip.

I had it at a fancy restaurant as a mashed soup:

I also had a mushroom steak made from a lion’s mane mushroom.  It was very good.  If you hadn’t told me it was a mushroom, I would have thought it was a well done steak.  Lion’s made mushrooms are high in protein and supposedly can help improve memory and mood.

The new fruit that I had is not really new to me; I’ve had it before, but not in the last four years.  It’s called a wax apple and it is one of my favorite fruits.  These juicy apples are high in calcium, potassium, very high in vitamins A and C.  And there is no sugar!  They are very crisp on the outside, juicy on the inside, and have a texture of a watermelon.  Unfortunately, they are mostly found in Asia.
