Kayla’s Mom’s Grilled Shrimp

You know that person that always seems to be able to make your favorite meals better than you can? Well, that’s my mom for me. For the most part (unless I’m feeling bold) I don’t even attempt to make certain things anymore because I can’t make them the same as my mom. This recipe though, it’s fool proof, and one that I’m proud to say I stole from my mom. Check out this super easy grilled shrimp recipe to add some variety to your summer meals on the grill.

Ingredients:

  • 2 lbs large peeled, deveined shrimp
  • 16oz Italian Dressing
  • 1 Yellow Bell Pepper sliced into bite-sized squares
  • 1 Orange Bell Pepper sliced into bite-sized squares
  • 1 Small Red Onion sliced into bite-sized squares
  • Wooden or metal skewers

Directions:

  1. Put the shrimp in a large bowl or resealable plastic bag. Add the dressing and toss until the shrimp is evenly coated. Add a little more dressing for the shrimp to sit in. Cover and marinate in the refrigerator for at least 15 minutes, no more than 4 hours.
  2. While shrimp is marinating, prepare the veggies and soak the wooden skewers in water for 15 minutes to prevent from burning on the grill.
  3. Preheat the grill to medium heat. Alternate threading the shrimp and veggies onto the skewers leaving about a centimeter between.
  4. Cook the skewers on the grill for 3 minutes per side or until the shrimp turns pink and are cooked through.

Kayla’s Mom’s Pro Tips:

  • Don’t have a grill? No big deal! Preheat your oven to 450 and roast the skewers on a sheet pan for about 5 to 7 minutes or until fully cooked through.
  • Use whatever veggies you like, don’t limit yourself to just peppers and onions.
  • Add more dressing over the veggies and shrimp to taste, if desired.
  • Serve over rice and with a side salad.
