Healthier Spaghetti and Meatballs Recipe

It’s January so I’m sure many people out there are trying to eat a little better than they did during the holidays. But it’s still cold here in Wisconsin so I’m craving some comfort food- are you with me? How about some spaghetti and meatballs? You can really make the pasta and sauce how you want but the key here is the meatballs- these are made with ground turkey and minced bell peppers. You get your meatballs and veggies all at once! Here is the recipe for the meatballs from the Pinch of Yum blog:

Ingredients:

  • 1 1/3 lbs. lean ground turkey
  • 2 cups minced bell peppers
  • 2 large eggs
  • ¼ cup freshly grated Parmesan cheese
  • ¾ cup Italian seasoned whole wheat breadcrumbs
  • ½ tsp. salt

Directions:

  1. Preheat oven to 350 degrees. Beat the eggs in a bowl, add the parmesan cheese and breadcrumbs and stir. Add bell peppers, turkey and salt.
  2. Roll the mixture into meatballs and place on a greased baking sheet, sprinkle meatballs with salt and pepper. Bake for 20 minutes. Remove from baking sheet and set aside.

Check the blog if you need directions on the spaghetti but I just use whole wheat spaghetti and a jar of whatever sauce we have in the cupboard- but you can certainly make your own sauce as well. To keep my portions in control when I eat spaghetti, I always steam a mixture of frozen broccoli and cauliflower and add a cup of that to my pasta and sauce. Enjoy!
