Freezing Avocados

Three cheers for avocados year round!  Did you know avocados can be frozen, either in halves or mashed?  I did not know this either, until recently, and it’s really easy to do.  Here’s how to do it:

Wash and cut the avocado in half.  If you’ve never cut an avocado, there is a huge seed/pit in the middle that you won’t be able to cut through.  Here’s a video if you’ve never done it.

To store in halves, squeeze or brush a little lemon juice on the exposed parts to help stop them from turning brown.  There’s nothing wrong with avocado turning brown, it’s natural from the oxidization but a little unsightly.

Wrap as air tight as you can with cling wrap and then put in a plastic zip lock bag, taking as much air out as possible.

To store mashed avocados, wash, cut, and deseed the “alligator pear”, as it’s sometimes called, and  puree in a blender with a little bit of lemon juice.  Place in a zip lock bag and pop in a freezer.

When you’re ready to eat, thaw out overnight in the fridge.

Frozen avocados store for 4-5 months.

It’s that easy!
