Easy Veggie Skillet

The holiday season can be such a tough time of year to stay on track with healthy eating. I try to incorporate vegetables into each meal so I know I am loading up on that instead of leaving room for extra desserts and beverages. It is important to indulge every now and then, however if I fill up on vegetables, I leave very little room in my appetite to over indulge!

The other night, I was feeling uninspired as to what to make for dinner.  I looked in my freezer, my fridge, and my pantry and grabbed a few things from each to make a random recipe. I was impressed with what I came up with since I started from scratch!

I am calling this an Easy Veggie Skillet. I made it with whatever vegetables I had in my fridge, some ground turkey, and marinara sauce! It was delicious and will make an appearance on our dinner table again. I hope your family enjoys it as much as mine did!

Easy Veggie Skillet

Ingredients:

  • 1 pound lean ground turkey (I use the leanest I can find)
  • 1 large sweet onion
  • 1 tablespoon minced garlic
  • 2 small zucchinis, sliced into small strips
  • 5 mushrooms, chopped
  • 1/2-1 full gab of fresh spinach
  • 1 cup marinara or spaghetti sauce (read the nutrition label and be conscious of sugar content!)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano

Directions:

In a large skillet, brown the ground turkey. Remove from pan. Add onions, garlic, zucchini and mushrooms to the skillet and cook until softened.  Add back the ground turkey. Add spinach, marinara and spices. Stir to combine until warm and spinach is wilted. Enjoy!
