Easy Baked Tilapia

Every few months I get things organized at home and last weekend that meant cleaning out our freezer. I found a bag of frozen tilapia, so I thought we'd use that up this week for a meal or two! Below is the recipe I have used several times--it's quick, easy and tastes great!

Easy Baked Tilapia

Ingredients:

  • 4 filets tilapia
  • 1/2 lemon
  • 1 1/2 tablespoons melted butter
Topping:
  • 1/4 cup panko bread crumbs
  • 2 tablespoons parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 tablespoon parsley
  • 1 teaspoon melted butter

Directions:​


Preheat oven to 400 degrees. Combine topping ingredients in a small bowl. Rinse tilapia filets, pat dry and place on a pan that has been sprayed with cooking spray. Drizzle butter over the fish, squeeze lemon on it, and then top with panko mixture. Cook for 15 minutes until fish is cooked and flaky. Broil for the last minute if desired.

We usually add a side of frozen vegetables and some sort of grain, or if the kids are choosing, mac and cheese!
