Cooking with Grapefruit

This weekend I rediscovered one of my favorite fruits - grapefruit! It had been months since I’d last eaten one so when I bit into the fruit the first time this spring I realized what I had been missing. Not only is grapefruit high in Vitamin C and full of fiber, it tastes delicious and can be a wonderfully refreshing snack on hot summer days. Now, one of the great things about this fruit is how easy it is to throw it in lunch box and go but if you’re looking to incorporate grapefruit into meals, here are some ideas.

First start with Avocado and Grapefruit salad, and then move onto Grapefruit Chicken
for the entrée:

1 (3 lb) whole chicken, rinsed and patted dry

1 grapefruit, cut in half

1 Tbsp olive oil

½ tsp seasoned salt

Directions:

1. Preheat oven to 400 degrees Fahrenheit.

2. Place chicken in roasting pan, and squeeze the juice from the grapefruit halves all over and inside the chicken. Drizzle chicken with olive oil, and sprinkle with seasoned salt. Cover with aluminum foil.

3. Bake in the preheated oven, covered, for 45 minutes; remove foil, and bake until meat is no longer pink at the bone and the juices run clear, about 15 more minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 180 degrees F. Remove the chicken from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before slicing.

Total fat per serving: 19.3 g

Cholesterol per serving: 97 mg

And finish off the meal with…you guessed it, Grapefruit mousse!

Now, I’m not suggesting grapefruit for every meal but maybe these ideas will help you squeeze out all the benefits of this fantastic fruit.
