Hello again, here are a few of my favorite things this month:
Kung Pao Shrimp
I found a delicious and easy Kung Pao Shrimp
recipe two weeks ago and my spouse loved it as well, now it's in our monthly rotation. If you like shrimp and spice, you would love this recipe.
I thawed some frozen shrimp we had, cooked some brown rice with it, and it took me less than 20 minutes.
Free Classes
Because there isn't much to do in my free time right now, I took advantage of it and took a free class. The Science of Well-Being was a hugely popular class at Yale, and now the professor is offering it for free with
Coursera.
Eau Claire Downtown Farmers Market
I have been running down to the market to then meet up with my husband and kids. People have been really good about spacing out, keeping masks on, and it's just nice to see all the colors with the produce and flowers.
Yoga in the Morning
I just do a really short video on YouTube most mornings lately as I've been having some back and neck pain and it's really made a difference. I've spoken about
Yoga with Adriene before and I've also done some of
Rodney Yee's videos. The key is, I only choose short videos. Keeping things under 15 minutes just makes it more likely for me to stick with it.
