Chickpea Avocado Salad

I love salads, like REALLY love salads.
 
However, sometimes I get sick of the same old same old and need to change things up. A few nights ago I was browsing Pinterest for some inspiration and stumbled upon this delectable Chickpea and Avocado Salad. I had all of the ingredients at home and whipped it up in no time. Let me tell you, it certainly did not disappoint! Not to mention it is full of healthy, well balanced, nutritious food! Give it a try and see what you think!
 
Chickpea and Avocado Salad Ingredients
  • 1 can chickpeas, rinsed and drained
  • 2 avocados, diced
  • 1/3 cup chopped parsley
  • 2 Tbsp. green onion, thinly sliced
  • 1/3 cup feta cheese
  • Juice of 1 lime
  • Salt and pepper, to taste

Instructions

Combine all the ingredients in a large bowl and stir gently to combine, making sure not to mash the avocadoes and feta. Season with salt and pepper to taste.
