Butternut Squash Noodles Recipe

I picked up Veggie Noodle Co. butternut squash noodles on my last haul to Target and was really excited to use them in a recipe. I don’t have a spiralizer at home so this was my first attempt at eating vegetable “noodles”. I searched for recipes all over the net using these but ended up settling on a really simple one from the Veggie Noodle Co. website- “No Carb Bruschetta with Balsamic Reduction” because I had mozzarella, basil, and cherry tomatoes at home. If you’re in the mood for trying something more adventurous with your spiralized vegetables try one of the following recipes:

Black Bean and Butternut Squash Noodle Tacos

Sweet Potato Spaghetti Casserole

Now, I would never suggest eliminating all pasta in your diet but I do think this is a really great way to add more vegetables in your day. You can purchase pre-cut veggies like I did or use a spiralizer and make your own- if you have a spiralizer please let me know if you like/love/hate it, I’m on the fence about purchasing one because I’m not sure how much I’ll get around to using it.
