A Week of Simple Recipes

I love getting a peek into what others are making for dinner on the weeknights, so I thought I would share my week of weeknight dinners to give you some inspiration!

Monday

Slow Cooker Fajita Soup-I served this with sliced avocados and it was delicious!

Tuesday

Stir Fry-This is super easy. All I do is cube up some chicken and cook it up, then add in 2-3 bags of frozen stir fry veggies. I make my own sauce by whisking together 1/4 cup soy sauce, 1 tablespoon rice vinegar, 1 tablespoon sesame oil, 1/2 tablespoon of garlic, 2 tablespoons of brown sugar and 1 tablespoon of corn starch. Add the sauce to your veggie/chicken mix, let it thicken up, and it's ready to serve!

Wednesday

Gnocchi with white beans-delicious and indulgent!

Thursday

One Pot Lasagna Skillet-Chop a few veggies, add all the ingredients to a pot and that's it! Super simple and delicious.

Friday

Thai Peanut Chicken Crunch Slaw Salad-This is a little more adventurous. This would be great for those who love pad thai but ar watching their food intake!
